Have you ever wondered how ricotta cheese is made? It’s easier than you think! In this class, we’ll start by creating our own fresh ricotta cheese from scratch — then use it in a delicious recipe. Next, we’ll roll up our sleeves to prepare hand-rolled tagliatelle, a classic pasta from Northern Italy. We’ll also make Piadina, the beloved Italian flatbread cooked right in a skillet and filled with a variety of tasty ingredients. To finish, we’ll prepare Farinata, the famous street food of Genoa, a flavorful, gluten-free flatbread made from chickpea flour.

About Our Instructor:
Diane has been a professional chef for 35 years, working in high end gourmet establishments as well as catering companies. She owned the Brickyard Cafe in Cambridge for 7 years which was an eclectic and popular restaurant tucked away in the Fresh Pond area. Diane has co-authored a Zone cookbook on healthy eating and worked as a food consultant with recipe development for a major corporation. She has been a culinary teacher at Assabet Regional Vocational School and Brookline High School and has participated in many charitable events including Dana Farber: Cooking for a Cure. She has been a personal chef with clients in the Boston area, and continues her passion of teaching culinary classes. Diane also has a successful Utube channel called Diane's World Kitchen and loves making cooking videos to share with all.
