Healthy Cooking & Nutrition
Understand the language of healthy eating with these informative lecture/demonstrations.  Registrants will participate with the preparation of several healthy recipes during each class.

The Benefits of Mushrooms:  One of the most important health benefits of mushrooms is that they provide a source of vitamin D. Vitamin D is a nutrient essential for your health, as it helps with the absorption of calcium and promotes bone and brain health. Mushrooms can also help with depression, boost your memory, and help with heart health.  

Improve Your Gut Health:  If you notice signs of poor gut health, lifestyle factors may help improve your gut microbiome and benefit your overall health.  Microbiome is the collection of natural micro-organisms that live on our skin.  Skin and gut microbiomes play an important role in many skin issues, including allergies, acne, and eczema.  Come learn about probiotics and prebiotics, healthy and necessary bacteria that can improve digestive health by restoring the natural balance in your gut.

Superfoods:  Superfoods are foods that are considered more nutritionally dense than other foods. Superfoods are mostly plants, but fish, and even sometimes red meat and fats, are labeled as ‘superfoods.’  Pulses are part of the legume family; the term pulse refers to the edible seed within the pod.  Beans, lentils, chickpeas, and split peas are pulses that have a lot going for them in terms of nutrition.  They are affordable, sustainable, high in protein, fiber, and are nutrient dense.  Packed with iron, magnesium, zinc, B vitamins, and potassium, many superfoods are considered antioxidants.

About Our Instructor:
While studying for her Master’s in International Business Management, Saundra started her healthy cooking & nutrition journey working with local corporations teaching them about the Glycemic index of foods.  She then worked for HealthCare Services, a cooking service company working with nursing homes to provide healthy and nutritious gourmet menus to their residents.  After working to conceptualize these menus, Saundra worked at Maplewood in Weston, MA preparing gourmet meals to residents.  She is currently preparing for her final exam to become a licensed nutritionist.
